• Our elegant rosé is made from a blend of Cinsault, Grenache and Syrah, all grown on the best terroirs of the Côtes de Provence A.O.C.  Our fruit predominately comes from the shallow schist and loam soils located in the Maures mountains and on the hilltop slopes near Flayosc, and we also source fruit from vineyards located at a slightly lower altitude, on the clay-limestone slopes of the commune of Le Thoronet, and the variegated sandstone soil of the Cannet des Maures. The grapes are mainly harvested in the early evening and into the night as the fruit cools which helps ensure a pale colour in the final assemblage. After a short maceration the fruit is cold-pressed and the juices are settled at low temperature.  There is no malolactic fermentation. Our secret assemblage is made to appeal.  The big names in Provence have all gone on the same journey; tightening their wines up and restricting the length of the finish, whereas our recipe is considerably more ‘old school’. The Cinsault variety gives the wine its softness, with the Grenache providing body and the Syrah giving the roundness of the red fruit which is amplified by our special assemblage. This is a very precise and structured rosé. The colour is pale pink with golden orange highlights. The nose gives fragrances of citrus fruit and summer flowers with a hint of spice. There is plenty of upfront fruit on the palate giving a huge strawberries and cream mouthful, before drifting towards peaches and pears, finally delivering a lemony edge with incredible length and a moreish finish.
